I always search for healthy recipes (okay, rarely) so usually not baked goods. However, I don't find many that are successful. I usually combine low level of difficulty with a vegetable. Let me share some ones I found:
Best Bean Salad
I replace the sugar with Stevia or Monk Fruit Sugar. The amount of sugar is quite a lot. Also a lot of olive oil, but you don't need to use as much as it says.
Mushroom Soup
Basically, you take a lot of mushrooms and blender them with water. You can add walnuts, dried minced onion, sea salt, pepper, thyme, etc. Best imbibed warm. It's a good way to get a lot of mushroom nutrition without an overdose of mushroom flavor.
Baked Kale Chips
Makes kale edible!
Carrot Souffle
Eating carrots is not my forte, but this recipe is my aid. Uses 1 cup white sugar, however. Maybe you can use less or sugar substitute.
Spinach Basil Pesto
Makes vegetables edible! Probably shouldn't use the expected level of olive oil for sanity's sake. Really, the ingredients you need are spinach or broccoli, olive oil, basil, garlic, and salt and pepper. I'm not familiar with pesto, so I don't know if it successfully attains pesto flavor. I basically make this to engender spinach with a better flavor so I can down copious amounts of the mixture.
I need delicious vegetable and fruit smoothies recipes. I currently use a mound of frozen fruit with a mound of frozen spinach. It basically tastes like sweetened spinach, which isn't great.
